Butterscotch Pie
Butterscotch Pie is an moderately easy dinner. Made with 1 baked (9-inch) pie crust, cooled, 2 eggs, 3/4 c. brown sugar, 3 tbsp. cornstarch and 2 c. milk or canned milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In saucepan, beat eggs.
Combine brown sugar and cornstarch. Add to eggs.
Then add milk (or canned milk).
Cook until the mixture thickens, stirring constantly.
Then add oleo until melted.
Take off of the stove and add vanilla.
Let cool.
Pour into pie shell and refrigerate until cold.
Top with Cool Whip and nuts (nuts are optional).
