Brunch Pie
Brunch Pie is an moderately easy dinner. Made with 1 (10 oz.) pkg. frozen chopped broccoli or chopped spinach or 8 oz. asparagus spears, cooked and drained, 1/2 c. bisquick baking mix, 2 eggs, 1 tomato, peeled and thinly sliced and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat oven to 350Β°.
Grease 9-inch pie plate.
Spread broccoli or spinach or asparagus in plate.
Beat sour cream, cottage cheese, baking mix, margarine and eggs until smooth.
Pour into plate.
Top with tomatoes; sprinkle with Parmesan cheese.
Bake until knife inserted between center and edge comes out clean, about 30 minutes.
Cool 5 minutes.
Serves 6 to 8.
