Broccoli Quesadilla
Broccoli Quesadilla is an impressive dinner. Made with 1 head broccoli, broken into large florets, 2 tsp. olive oil, 1 medium red onion, finely chopped, 2 cloves minced garlic and 1/2 tsp. ground cumin, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Steam, boil or microwave broccoli until crisp-tender. Coarsely chop and set aside.
In a large nonstick frypan, heat 1 teaspoon oil.
Add onion; saute for 3 to 4 minutes to soften.
Add garlic, cumin, chili powder and cinnamon; cook 1 minute.
Add broccoli, peppers and tomatoes.
Stir well and saute for 3 to 4 minutes.
Put in a bowl and stir in cilantro.
Set aside.
