Broccoli Cornbread
Broccoli Cornbread is an moderately easy dinner. Made with 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained, 1 large onion, chopped fine, 1 1/2 c. grated sharp cheddar cheese, 1/2 c. melted butter and 4 beaten eggs, this recipe delivers authentic, satisfying flavors. Mix broccoli, onion, eggs, butter, 1 cup cheese and salt.
Add corn muffin mix; mix and blend thoroughly.
Pour into a greased 9 x 13-inch casserole dish or a 9 x 12-inch pan.
Sprinkle the rest of the cheese on top.
Bake at 400Β° for 20 to 30 minutes, until mixture tests done.
Cut into squares and serve hot.
