Broccoli Casserole
Broccoli Casserole is an moderately easy dinner. Made with 2 (10 oz.) pkg. frozen chopped broccoli, 1 can cream of mushroom soup, 1 c. mayonnaise, 2 eggs, well beaten and 1 c. sharp cheese, grated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook (or steam) the broccoli for 5 or 6 minutes; drain well. Combine soup with the mayonnaise, eggs and cheese.
Add onion; mix well.
Pepper to taste.
Add broccoli; mix well.
Spray a casserole dish with cooking spray.
Pour in mixture.
Top with crushed Ritz crackers.
Top with margarine.
Bake for about 30 minutes in a 350Β° oven.
