Breakfast Muffins
Breakfast Muffins is an moderately easy dessert you can prepare in about 1 hour 10 minutes. Made with c. self-rising flour, c. sugar, c. milk, at room temperature, jam (blackberry, strawberry, etc.) and c. shortening (crisco), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cream shortening and sugar until fluffy.
Beat in egg, milk and vanilla.
Add flour and stir until just moist; leave lumpy. Fill muffin tins 1/2 full; top with teaspoon of jam.
Cover each with remaining batter.
Sprinkle muffins with cinnamon/sugar mixture before baking.
Bake at 400Β° for 15 to 20 minutes.
Yields 9 to 12 muffins.
