Breakfast Frittata
Breakfast Frittata is an moderately easy dinner. Made with 2 c. potatoes, raw and shredded, 2 c. chopped broccoli, raw, 1/2 c. diced onion, 1/2 c. chopped green pepper and 2 tbsp. butter flavored crisco, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together potatoes, broccoli, onion, green pepper and butter in skillet.
Cook spuds in butter until tender.
Add onions and peppers; cook until onions are tender.
Add broccoli; cover and cook on low for 5 minutes.
Add to mixture eggs, Parmesan cheese, basil, salt, pepper and water.
Cover and cook on low for 10 to 15 minutes (until edges are set).
Sprinkle 1/4 cup Monterey Jack cheese on top (optional).
Take off heat; cover and let set for 5 minutes.
Serve.
