Beat eggs until light and foamy. Add oil, sugar, grated zucchini and vanilla.
Mix lightly but well. Add flour, salt, soda, spices and baking powder (all sifted). Blend well. Add nuts and berries. Use 2 (9 x 5 x 2) loaf pans. Bake at 325Β° for 1 hour. Makes 2 breads. Very delicious!
