Blueberry Vinegar
Blueberry Vinegar is an moderately easy dinner you can prepare in about 1 hour 18 minutes. Made with pt. fresh or unsweetened blueberries, c. cider vinegar (quality name brand) and c. granulated sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Place blueberries in 2-quart crock or jar.
(Do not use plastic container.)
Pour vinegar over blueberries; mash berries slightly with wooden spoon or potato masher.
Let stand overnight. Strain vinegar into 1 1/2-quart saucepan, discarding berries. Stir in sugar.
Bring to boil; boil for 10 minutes.
Pour hot vinegar into clean, sterilized bottles or jars and cap with clean corks.
If you use jars, line lids with several layers of plastic wrap.
Refrigerate.
Yield: 1 quart vinegar.
