Blue Damson Pie
Blue Damson Pie is an easy dinner. Made with 4 c. blue damsons, pitted, 1 1/2 c. sugar or 1/2 c. brown sugar and 1 c. white, 2 tbsp. flour or tapioca, 2 tbsp. butter and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook damsons with sugar and a little water (up to halfway of plums in pan).
Cook until done.
Remove from heat and add flour or tapioca, butter and beaten eggs.
Pour into pie crust and top with pie crust.
Bake at 450° for about 15 minutes, then lower oven temperature to 350° and bake about 35 minutes more.
