Blender Pesto
Blender Pesto is an moderately easy dinner. Made with 2 cloves garlic, peeled, 2 c. fresh basil leaves, torn if they're large, 1/2 c. olive oil, 2 tbsp. pine nuts and 1/4 to 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Put the garlic in the blender and whirl at high speed.
Add the basil, olive oil, nuts and salt and mix until well blended, but still with a bit of texture.
Use a spatula to scrape down the sides and blend once more.
Check for seasoning.
Remove to a jar.
Stir in the cheese by hand when ready to add to a dish.
Makes about a cup.
