Blender Bean Soup
Blender Bean Soup is an moderately easy dinner. Made with 1 lb. dry navy beans, 3 medium carrots, sliced, 1 meaty ham bone, 2 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place about 1/3 of the dry beans in a blender container; blend until chopped. Remove; repeat process until all beans are chopped. Place carrots in blender; cover with water.
Blend until coarsely chopped; drain. Combine chopped beans, carrots, 2 quarts water, ham bone, salt, pepper and bay leaf in large kettle. Cover; simmer 3 hours, adding onion the last hour. Remove ham bone and bay leaf. Add about 1/3 of the bean mixture at a time to blender container. Blend at low speed until nearly smooth. Cut ham off bone; add to soup. Serves 8.
