Blackberry Cake
Blackberry Cake is an moderately easy dinner. Made with 1/2 c. butter, 1 c. sugar, 4 tsp. cold water, 1 c. preserved fruit (blackberries) and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream butter and sugar together until very light; add beaten yolks, water, soda, spices, preserves and flour.
Stir all together.
Beat thoroughly; cut and fold in the beaten whites. Bake in a loaf in a moderate oven about 45 minutes.
Cover with plain icing.
Use blackberry, strawberry or raspberry jam.
