Black Bean Soup
Black Bean Soup is an impressive soup you can prepare in about 1 hour 36 minutes. Made with (16 oz.) pkg. black beans, large ham bone with meat, large onion, chopped, large carrot, thinly sliced and medium potato, diced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Soak beans overnight.
Drain, rinse and remove any bad beans. Put beans and next 7 ingredients in a large pot.
Cover with water.
Add salt and pepper to taste.
Bring to boil.
Cover and simmer 3 to 4 hours until done.
Serve in soup bowls with a large tablespoon of sour cream on top.
Garnish with hard-boiled egg or slice of lemon.
