"Bilodi" Black-Eyed Pea Salad is an moderately easy dinner. Made with 1 lb. dried black-eyed peas, 2 c. italian salad dressing, 1 c. diced green bell pepper, 1 1/2 c. diced onion and 1 c. finely diced green onion, this recipe delivers authentic, satisfying flavors. Soak peas 6 hours, then cook with fresh water 45 minutes. (Optional
Use 1 pound canned black-eyed peas, drained.) After draining black-eyed peas, add all other ingredients except dressing.
Toss well, then add dressing.
Toss lightly.
