Beet Salad
Beet Salad is an moderately easy dinner. Made with 1 (16 oz.) can sliced beets, diced small, 1 c. celery, diced, 1 (3 oz.) pkg. lemon jello, pinch of salt and tiny bit of horseradish (optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain beets, reserving juice.
Dice beets.
Add beet juice to vinegar to make 1 cup liquid.
Add sugar and salt to liquid. Bring to a boil.
Pour over jello, stirring until dissolved. Chill until cool.
Add beets, celery and onion.
Chill until set. Spread with Miracle Whip to which you have added a tiny bit of horseradish.
Also good without the horseradish.
