Beet Salad
Earthy roasted beets tossed with vinaigrette, red onion, and a crumble of feta or goat cheese. Bright, ruby, and a make-ahead salad that gets better overnight.

Dissolve jello in hot beet juice.
Mix beets and cream cheese.
Stir in beets, cream cheese and pineapple.
Put in refrigerator to harden.
Serve on lettuce leaves topped with mayonnaise.
