Beet-Rhubarb Compote is an easy dinner. Made with 3 to 4 medium size beets and 1 lb. rhubarb (i use seabrook farms frozen rhubarb), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Wrap each beet in aluminum foil. Bake in a 350Β° oven until done.
Cook the rhubarb according to directions.
Dice cooked beets. Add to the cooked rhubarb.
Chill. Serve as side dish. It's colorful with a different taste.
