Beet Pickles
Beet Pickles is an moderately easy dinner. Made with 1 gal. beets, 2 c. sugar, 1 1/2 tsp. salt, 2 sticks cinnamon and 1 tbsp. allspice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash and drain beets.
Boil in water; remove skins.
Simmer together for 15 minutes the sugar, salt, spices, water and vinegar.
Cover the beets (packed in pint jars).
If not enough liquid to cover, add more vinegar.
Process pints and quarts for 30 minutes in boiling water bath or in pressure cooker for 5 minutes at 5 pounds pressure.
