Beet Luncheon Salad is an moderately easy dinner. Made with 1 (3 oz.) lemon jell-o, 3 tbsp. vinegar, 1 tsp. salt, 1 1/2 c. diced, cooked beets and 1 1/2 c. shredded cabbage, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dissolve lemon Jell-O in 1 pint hot water.
Add vinegar and salt.
Chill until slightly thickened, then fold in beets, cabbage, green pepper and onion.
Turn into molds.
Chill until firm.
