Combine 1 cup cornmeal, milk, eggs, salt, soda, bacon drippings and corn in a bowl.
Cook ground beef until lightly browned; drain well and set aside.
Sprinkle 1 tablespoon cornmeal in a greased 13 x 9 x 2-inch pan.
Sprinkle evenly with beef.
Top with onion and cheese.
Sprinkle peppers over top.
Pour corn mixture over peppers.
Bake at 350° for 50 minutes or until golden brown.
