Dredge beef with cornstarch, sherry, 1 Tbsp soy sauce and ginger.
Oil and saute beef strips.
When beef changes color, remove to a plate and in remaining oil saute bell peppers for 1 minute; add salt. Combine beef, peppers, 1 Tbsp soy sauce & sugar.
Heat well.
