Beef Stroganoff
Beef Stroganoff is an moderately easy dinner. Made with 3 tbsp. flour, 1/4 c. butter or margarine, 1 lb. top round or tenderloin steak (1/2-inch thick), 1 small onion, chopped fine and 1/2 lb. mushrooms, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Pound flour well into the beef until steak is about 1/4-inch thick.
Cut into 1/4-inch wide strips.
Add beef strips to the butter heated in a heavy skillet and brown on all sides, turning frequently.
Remove to bowl and cover to keep hot.
Add onions and cleaned, sliced mushrooms to skillet.
Cover and cook slowly, 5 minutes, stirring occasionally.
Return meat to skillet; stir in Worcestershire sauce and sour cream.
Cover and reheat to boiling. Season with salt and pepper.
Serve at once with hot fluffy boiled white or wild rice.
