Beef-Barley Stew
Beef-Barley Stew is an moderately easy dinner. Made with 1 1/2 lb. ground beef, 1 large onion, chopped (about 1 c.), 2 medium stalks celery, sliced (about 1 c.), 1 (28 oz.) can whole tomatoes (undrained) and 1 c. uncooked regular pearled barley, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook ground beef, onion and celery in a nonstick Dutch oven, stirring frequently, until beef is brown; drain.
Stir in remaining ingredients, breaking up tomatoes.
Heat to boiling; reduce heat.
Cover and simmer about 1 hour or until barley is tender and stew is desired consistency.
