Bean Soup
Bean Soup is an moderately easy dinner. Made with 1 1/2 c. dry navy beans or great northern beans, 7 c. water, 1 large onion, 1 tsp. salt and 1 ham bone or 1 c. diced ham, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash beans and drain.
Put beans and water in a pot and bring to a boil.
Continue to boil 2 minutes.
Remove from heat.
Cover and let stand one hour.
Add onion, salt, ham and carrots to the beans.
Cover and simmer about 2 1/2 hours or until beans are soft.
For thicker soup, simmer longer.
Add additional water for thinner soup.
This soup freezes very well and tastes just as good.
