Bean Soup
Bean Soup is an impressive dinner. Made with 1 c. navy pea beans, 2 carrots, 2 onions, 2 potatoes and 1 1/2 c. cooked ham, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash and soak beans in cold water overnight.
Drain beans; add hot water and sliced vegetables.
Add meat and spices.
Cover; simmer slowly 1 1/2 hours.
Melt butter; stir in 1 tablespoon flour and several dashes of paprika.
Add some broth from soup to make paste.
Stir this back into soup and cook a few more minutes. Makes 8 servings.
