Bean Salad
Bean Salad is an moderately easy dinner. Made with 1 1/2 c. chickpeas, drained, 1/4 lb. fresh green beans, cooked, 1/4 lb. fresh yellow beans, cooked, 2 shallots, chopped and 1 1/2 tbsp. mustard, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place chickpeas and green and yellow beans in mixing bowl. Season well.
Place shallots, mustard, garlic, vinegar and oil in small bowl.
Season and, using a wire whisk, mix well until thick. Pour dressing over beans.
Mix well.
Add parsley and tarragon; mix well.
Let sit 15 to 30 minutes at room temperature.
