Bean Enchiladas
Bean Enchiladas is an moderately easy dinner. Made with 1/2 c. chopped onions, 8 oz. chicken breast (1/2-inch cubes), 1 (no. 1) can kidney beans, drained, 1 (4 oz.) can chopped green chilies and 1/2 c. chopped cilantro or parsley, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Preheat oven to 350Β°.
Spray large skillet with Pam.
When hot, saute onion until soft.
Add chicken, beans and chilies. Simmer 10 minutes or until chicken is cooked.
Heat tortillas gently.
Spoon some filling along one edge and roll up the tortillas.
Place seam-side down in large baking pan.
In mixing bowl, combine enchilada and tomato sauce; pour over rolled tortillas.
Top with cheese and bake 25 to 30 minutes.
Garnish with nonfat yogurt and cilantro.
