Bean Chalupa
Bean Chalupa is an moderately easy dinner. Made with 3 to 5 lb. pork roast, 1 lb. dry pinto beans, 1/2 c. onion, chopped, 1 small can chopped chilies and 2 tbsp. chili powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Rinse pinto beans.
Place in a large pot.
Add pork roast and other ingredients.
Pour enough water to cover roast.
Cover pot and simmer for at least 5 hours or until meat shreds.
Stir to thicken.
Serve a spoonful of mixture on taco shells or soft flour shells using other condiments such as lettuce, tomatoes, cheese or sour cream.
May also be served over corn chips.
