Bean and Bacon Loaf
Bean And Bacon Loaf is an moderately easy dinner. Made with 1 1/2 c. dried lima beans, 1/2 lb. bacon, 1 egg, 1 tsp. salt and 1/4 c. celery, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Soak beans overnight; cook until tender, about 45 minutes. Cook bacon.
Run beans, bread, celery and bacon through the food chopper.
Blend with egg and peanut butter; add the fat remaining from the crisped bacon.
Mold into loaf and bake in slow oven about 45 minutes.
Serves 6 and is delicious with tomato sauce. The remaining can be sliced and served cold the following day.
