Basque Chicken Stew
Basque Chicken Stew is an impressive dinner. Made with 1 1/4 lb. boneless chicken breasts, 1/4 tsp. salt, 1/4 tsp. pepper, 1 tbsp. olive oil and 1 medium onion, sliced thin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oil in Dutch oven with salt and pepper. Cook chicken 2 minutes per side. Add onion and red pepper. Cook 3 minutes.
Add garlic and cook 30 seconds.
Add tomatoes, broth, potatoes and thyme.
Bring to boil.
Reduce heat and cover. Simmer 20 minutes. Add macaroni and cook 10 to 12 minutes.
Add olives.
Cook 3 to 4 minutes.
Serve with crusty French bread.
