Barbara Mandrell's Pig Picking Cake
Barbara Mandrell'S Pig Picking Cake is an easy dinner. Made with 1 (18 1/2 oz.) pkg. butter flavor cake with pudding mix, 1/2 c. oil, 4 eggs, 1 small can mandarin oranges with juice and 1/2 c. chopped walnuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Grease two 9-inch layer pans; line bottom with waxed paper and grease again and set aside.
Prepare cake mix according to package directions, using oil, eggs and juice drained from oranges.
Stir in oranges and nuts.
Spread evenly in prepared pans.
Bake in preheated 325Β° oven for 25 minutes or until done.
Cool pans on racks 10 minutes.
Remove cakes from pans; peel off wax paper and continue to cool on racks.
Place one layer on a serving plate and spread with 1/3 of the frosting.
Add second layer and frost top and sides of cake.
Makes 12 servings.
