Banana Nut Loaf
Banana Nut Loaf is an moderately easy dinner. Made with 2/3 c. sugar, 1/3 c. soft shortening, 2 eggs, 3 tbsp. buttermilk and 1 c. mashed ripe bananas (2 or 3), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350Β°.
Cream the sugar, shortening and eggs thoroughly together.
Stir in buttermilk, mashed bananas and flour, then stir in soda and fold in chopped nuts.
If using plain flour, use 2 teaspoons soda and 1/2 teaspoon salt.
Bake in greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan for 50 to 60 minutes. Yields 1 loaf.
