Banana Nut Bread
Banana Nut Bread is an moderately easy dinner. Made with 2/3 c. butter or margarine, 1/3 c. brown sugar, 1 c. mashed ripe bananas, 1 tsp. baking soda dissolved in 1 tbsp. water and 2/3 c. chopped nuts (walnuts or pecans), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350°.
Mix butter and both sugars until well blended.
Add eggs and mix well; add bananas, buttermilk and water with baking soda and mix well.
Slowly add flour and mix until well blended.
Do not overbeat.
Stir in chopped nuts.
Pour into 9 1/2 x 5 1/2 x 3-inch loaf pan.
Bake at 350° for 55 to 60 minutes.
Cool in pan 5 minutes then remove from pan and place on cooling rack.
Store in refrigerator (this tastes better after it has been stored in refrigerator for 24 hours).
This bread freezes well.
