Banana Muffins
Banana Muffins is an moderately easy dinner. Made with 1 3/4 c. cake flour, 2 tsp. baking powder, 1/4 tsp. baking soda, 3/4 tsp. salt and 1/4 c. shortening, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Sift together flour, baking powder, soda and salt.
Beat shortening until creamy.
Add sugar gradually and continue beating until light and fluffy.
Add egg and beat well.
Add flour mixture alternately with bananas, mixing until batter is smooth.
Turn into well-greased small muffin pans and bake in 425Β° oven for about 20 minutes or until muffins are done.
Makes about 16 muffins.
