Banana Bread
Banana Bread is an moderately easy dinner. Made with 3/4 c. sugar (i use 1/2 c.), 1/3 c. vegetable oil, 2 eggs, 1 c. mashed bananas and 3/4 tsp. grated lemon rind, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat together the sugar, oil and eggs.
Stir in bananas and lemon rind (optional).
Sift flour, soda, baking powder and salt. Add to banana mixture.
Stir until combined.
Fold in nuts.
Pour into well-greased loaf pan.
Bake 50 to 60 minutes at 325Β°. Remove from pan and cool on rack.
