Baked Squash
Baked Squash is an moderately easy dinner. Made with 2 lb. yellow squash, cut in 1/2-inch slices, 3 tbsp. chopped onion, 3 eggs, beaten, 1/2 tsp. hot sauce and 2 tsp. parsley flakes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook squash in small amount of boiling water until tender. Drain well.
Add remaining ingredients, except 1 cup cracker crumbs.
Stir gently.
Spoon mixture into lightly greased 1 1/2-quart casserole and sprinkle with remaining cracker crumbs. Bake at 350Β° for 35 to 40 minutes.
Serves 6.
