Baked Spinach Tomatoes
Baked Spinach Tomatoes is an moderately easy dinner. Made with 12 medium tomatoes, 1 1/2 tsp. salt, 1 1/2 tsp. sugar, 3 (10 oz.) frozen chopped spinach and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut top 1/4 off tomatoes.
Scoop out.
Sprinkle insides with salt and sugar.
Invert tomatoes and drain.
Cook spinach briefly. Press water out.
Saute onion in butter.
Add flour.
Stir until blended, then add milk.
Stir until thick and bubbly.
Add spinach, salt and pepper.
Fill tomatoes.
Can sprinkle tops with buttered crumbs or Parmesan cheese.
Prepare ahead, but do not bake up to 24 hours.
Bake at 350Β° for 20 minutes.
Let stand 30 minutes.
