Baked Potato Salad
Baked Potato Salad is an moderately easy dinner. Made with 6 to 8 medium potatoes, cooked and diced, 1 pkg. velveeta cheese (use about 3/4 lb.), 1 large onion, diced, 6 slices bacon and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onion in small amount of butter in microwave until tender.
Cook bacon until almost done.
Let cool and cut into small pieces.
Add potatoes, cheese, onion, bacon and mayonnaise in bowl.
Stir well.
Add salt and pepper to taste.
Pour into a buttered 2-quart casserole and bake at 350Β° until cheese melts (usually 30 to 40 minutes) or microwave.
