Baked Potato Casserole
Baked Potato Casserole is an moderately easy dinner. Made with 8 potatoes, 1/2 lb. fried bacon, 1 c. mayonnaise or miracle whip, 1 onion and 1/2 c. sour cream, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Wash and cut potatoes into cubes (leave peeling on, if desired).
Cook potatoes for about 15 minutes, then put them in a 9 x 13-inch pan.
In a food processor, chop the bacon, cheese and onion together.
Add the mayonnaise and sour cream to this mixture, it will be very thick, then spread this over the potatoes in the pan.
You can retain some of the cheese to sprinkle on top.
