Baked Mochi
Baked Mochi is an moderately easy dinner. Made with 1 box mochiko, 2 c. sugar, 1 tsp. vanilla, 1 tsp. baking powder and 1 (12 oz.) can coconut milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix dry ingredients, except potato starch.
Add water and coconut milk gradually until well mixed.
Add vanilla and coloring and pour into greased 9 x 13-inch pan.
Cover with foil and bake in 350Β° oven for 1 hour.
Do not underbake.
In fact, overbake. Cool completely.
Cut into smaller pieces and roll in potato starch.
