Baked Corn
Baked Corn is an moderately easy dinner. Made with 2 eggs, salt and pepper to taste, 1 large can cream-style corn, 1 large can whole kernel corn (include the liquid) and 2/3 c. half and half, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Beat eggs in bowl until frothy.
Add chunks of butter (about 4 tablespoons), half and half and cracker crumbs.
(Reserve small amount for top.)
Add corn and liquid; stir well.
Turn into a buttered 2-quart casserole dish.
Top with reserved crackers and dot with butter.
