Baked Chicken Reuben
Baked Chicken Reuben is an moderately easy dinner you can prepare in about 1 hour 8 minutes. Made with whole chicken breasts, halved and boned, salt and pepper, (16 oz.) can sauerkraut, press out excess liquid, (4 x 6-inch) slices swiss or monterey type cheese and c. thousand island dressing, this recipe delivers authentic, satisfying flavors. Place skinned chicken breasts in 8-inch square baking dish that has been lightly oiled.
Lightly salt and pepper.
Place drained sauerkraut over chicken; top with cheese slices, one over each breast.
Pour dressing evenly over the cheese.
Cover with foil and bake in a 325Β° oven about 1 1/2 hours or until fork can be inserted in chicken with ease.
Sprinkle with chopped parsley. Makes four servings.
Baked potato skins can also be baked at the same time.
