Baconized Corn Muffins
Baconized Corn Muffins is an moderately easy dinner. Made with 1 c. flour, 1 c. cornmeal, 1/4 c. sugar, 1 tsp. baking powder and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Sift flour once before measuring.
Sift flour, cornmeal, sugar, baking powder, soda and salt together.
Beat egg and add milk.
Combine with flour mixture.
Add melted shortening and beat well.
Fill greased muffin cups 2/3 full.
Sprinkle tops with uncooked diced bacon.
Bake 15 minutes in 400Β° oven, then set muffins under broiler so that bacon may become crisp.
Yield: 8 muffins.
