Aztec Quiche
Aztec Quiche is an moderately easy dinner. Made with 1 1/4 c. monterey jack cheese, grated, 3/4 c. grated mild cheddar, 1 (9-inch) deep-dish frozen pie shell, 1 (4 oz.) can diced green chilies and 1 c. half and half, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
For the freezer
Spread the Monterey Jack cheese and half the Cheddar over the bottom of the pie shell.
Sprinkle diced chilies over cheeses.
Stir together in a bowl the half and half, eggs and seasonings.
Pour carefully into the pie shell.
Sprinkle with remaining Cheddar.
Cover the pie with foil and freeze (optional).
