Avocados and Shrimp
Avocados And Shrimp is an impressive dinner. Made with 2 lb. shrimp, cooked, shelled and deveined, 1 c. salad oil, 1 medium red onion, thinly sliced, 3/4 c. white wine vinegar and 1/2 c. celery, minced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Toss the shrimp with all ingredients, except the last three listed.
Shrimp mixture for 24 hours.
Remove bay leaves and strain shrimp mixture.
Sprinkle diced avocados with lime juice.
Add avocados to the strained shrimp mixture. Serve on lettuce lined plates.
Serves 8.
