Avocado Gazpacho is an impressive dinner. Made with 1 t. tomato juice, 1/2 c. canned tomato purée, 3 medium avocados, peeled and chopped, 1 medium cucumber, peeled and chopped and 1 large green pepper, seeded and chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In a large bowl, combine all ingredients, except croutons. Chill thoroughly for 2 to 3 hours.
