Peel amount of potatoes to feed your family.

Cut potatoes in very small cubes.

Deep fry potatoes until done.

When done, put potatoes in a dry skillet (do not turn burner on).

Scramble enough eggs for your family.

When eggs are done, pour them into skillet with potatoes.

Add salt and pepper to taste.

Mix potatoes and eggs together, then sprinkle enough Italian seasoning, garlic powder and parsley flakes to suit your taste. Turn skillet on low long enough to get the ingredients warm. Ready to serve.
