Aunt Jan's Twice Baked Potatoes
Aunt Jan'S Twice Baked Potatoes is an moderately easy dinner. Made with 5 large baking potatoes, 8 strips cooked bacon, 1/2 c. chopped green onion, 1 1/2 c. sour cream and 5 tbsp. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Bake potatoes (oil skins) at 400° for 55 minutes.
Cut potatoes lengthwise in half.
Hollow out potatoes in large bowl and mash thoroughly.
In large skillet, heat 3 to 4 tablespoons bacon drippings.
Add onions and saute.
Add crumbled bacon, potatoes, sour cream, 1/2 of the cheese, salt and pepper.
Blend well.
Add mixture to skins, place pats of butter on top and sprinkle with parsley and paprika.
Place in skins in baking dish (9 x 12-inch).
Bake uncovered at 350° for 12 to 20 minutes.
