Atkelt Alecha
Atkelt Alecha is an moderately easy dinner. Made with 2 c. peeled and sliced carrots, 1/4 lb. string beans, ends cut and broken in halves, 1/2 lb. potatoes, peeled and cubed, 1/4 c. vegetable oil and 1/3 c. sliced spanish onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil carrots, string beans and potatoes separately in enough water to cover each.
Boil carrots and potatoes about 15 minutes, beans about 10 minutes.
In Dutch oven, heat oil.
Saute onion until brown.
Add cardamon, ginger, garlic and salt to taste; stir well to blend.
Add vegetables.
Let simmer about 3 minutes. Makes 4 to 6 servings.
